Ingredients for 6 people
600 gr of Fresh Umbricelli or 500 dried Umbricelli
2 large cloves of Aglione or 3 medium cloves
1 kg of ripe tomatoes
1 tablespoon of vinegar
A tip of a knife chili pepper
6 tablespoons of excellent quality extra virgin olive oil plus 4 tablespoons per serving
Preparation
Put a large saucepan of water on the stove and bring to the boil, wash the tomatoes, then immerse them in boiling
water for a couple of minutes. Drain and peel, then cut them in half, remove the seeds and dice them. Peel and finely chop the aglione coves . Heat the olive oil in a large pan, add the
chopped aglione and cook over a low heat, stirring occasionally. The aglione should not become brown, it will form a creamy dough without sticking to the pan or wooden spoon. If it gets too
thick, add some water, one tablespoon at a time. After 15 minutes add the vinegar and cook for another 2 or 3 minutes then add the tomatoes and salt. Cook over medium heat for about 40 minutes.
Add the chili pepper and some basil leaves before turning off the flame, then stir. Cook the pici in plenty salted water (if you use fresh pici add a couples of spoon of olive oil to the water
together with the salt), drain and season with the tomato-aglione sauce. In every portion add a bit of olive oil and decorate with a basil leaf.
Ingredients
- 300 gr sifted flour
- 100 gr frumina
- 250 gr natural white yogurt
- 250 gr confectioners' sugar
- 4 eggs
- 150 ml extra vergin olive oil
- 1 lemon
- 1 envelope of baking powder (16 gr)
Directions
In a large bowl cream together sugar and eggs. Add yogurt and extra virgin olive oil and continue beating for 5 minutes.
Little by little add sifted flour and continue beating. Then add, baking powder and lemon zest. Beating for other 5 minutes.
Grease and flour the pen (about φ 24 cm).
Bake in preheated oven for about 40-45 minutes at the temperature of 180 ° C.
Turn cake out onto a cotton dish towel and when cake is cool, top with confectioners' sugar or serve with fruit or by itself
Options
- Use fruit yogurt (banana, berries…)
- At the end of the process you can add chocolate chip or fruit drops.
